Why it matters

It is the snack a Vung Tau trip turns on. Nguyễn Trường Tộ and Hoàng Hoa Thám are the streets to eat it.

Texture

The cakes fry in small cast-iron molds until the outside is crisp and the inside is soft, then take shrimp or squid, scallions, and scallion oil on top.

The batter is given two ways: rice flour, or flour with curry powder, finished with shrimp powder.

Taste

The dip is sweet-sour fish sauce. Papaya and a little chili also go in the sauce.

How to enjoy it

Wrap one cake at a time in lettuce and herbs, then dip it. Keep the sauce on the side rather than pouring it over the stack.

It is a small molded cake, not a folded bánh xèo.

Where to try it

Nguyễn Trường Tộ, on the Back Beach side of town. One kitchen at number 14 opens 7:00–14:00 on weekdays and 7:00–20:00 on Sundays.

Hoàng Hoa Thám, the street that leads to the whale hall, is the other bánh khọt street.
