Why it matters

When the honey is taken, the keeper cuts away a little young comb, called dọn tàn, so the colony can go on. That comb is the start of the dish.

How to enjoy it

The young comb is boiled so the wax melts and the pupae rise. They are skimmed out and drained before cooking.

The same pupae are also batter-fried or made into mắm ong. Nhộng ong trộn bắp chuối, with banana blossom, is the plate singled out.
