Where it comes from

Vung Tau, the soft bowl after a day out.

How to enjoy it

Eat it from the bowl, with the fried shallots and cilantro.

In Dong Hoi, Nhật Lệ oysters are shelled, rinsed, and stir-fried with scallion, chili, pepper, salt, and fish sauce, then added to rice porridge, with bone broth optional. A second way drops the seasoned raw oyster into boiling porridge. Herbs, or chili in shrimp-paste fish sauce, finish the bowl. Spring, around Tết, is the season; from July through November the oysters are fewer and less good.
