Com chay Cơm cháy

Cơm cháy is the crisp rice cake Ninh Bình sends home: fragrant gạo tám from Hải Hậu, cooked in a thick iron pot until the edge scorches, crisp without being hard. At Tam Coc the same crisp rice is nếp hương with ruốc, eaten with mountain goat or with heart and kidney stir-fried with carrot, tomato, mushroom, and onion. The 20 December 2016 tourism note describes Ninh Bình cơm cháy with beef tenderloin, pork heart and kidney, tomato, carrot, onion, and nấm hương. The 20 October 2023 culture office places beef, pork heart and kidney, tomato, and carrot in thành phố Ninh Bình or the old capital, not on a Tam Coc street. Beef and shiitake stay. Goat and ruốc stay.

Where it comes from

Ninh Bình, as a gift and a table dish. The rice comes from Hải Hậu, which the provincial culture office still lists under tỉnh Nam Định.

How to enjoy it

Break the cake and eat it with ruốc, or as cơm cháy sốt dê at the goat table.

The hot topping is poured on so the rice crackles. Tam Coc restaurants also serve it with the goat and the offal stir-fry.

Where to try it

The roads out toward Tràng An, Hoa Lư, and Bái Đính, and as a packaged gift.

Restaurants at Tam Coc.
