Why it matters

The handbook and the tourism portal say the name comes from stirring the soup with chopsticks in bamboo or nứa tubes while people were out at the fields.

How to enjoy it

The tourism portal, 16 Mar 2022, and the 2024 handbook list lá bép (also called lá nhíp), palm shoots, bitter eggplant, and stream fish, and say cooks also add lòng non, pork ribs, or canned fish. They stir with chopsticks so the ingredients soften.

VnExpress, on 2 Jun 2021, lists rau nhíp, bamboo shoots, meat or stream fish, a few termites, and mole crickets. The soup goes into a sealed fresh lồ ô tube, tilted on the fire and turned. A thorny rattan strip mashes it, then salt, chili, and sometimes herbs go in.

Bao Lam Dong, on 22 Sep 2023, lists palm shoots, bép, bitter eggplant, and chili, plus dried small stream fish or pork ribs. Seasoning on that account is salt and MSG. The lồ ô internode should be long, and neither so old that it cracks nor so young that the soup suffers. A stick the length of the tube mashes the contents and lets steam out.
