Where it comes from

Vietnam.vn, 6 February 2026, bylined VietNamNet. The article keeps the old Bình Định geography inside the merged province.

How to enjoy it

Boil and chop the pork head. Fry belly. Mix with pepper, galangal, toasted sesame, seasoning, roasted rice powder, and garlic. The article says the mix varies by village.

Wrap it in banana leaf or mature guava leaf, then plastic, then a sheaf of straw tied so the straws cover the parcel.

It ferments on its own. After two or three days it is lightly sour and smells of galangal and garlic.

Where to try it

The former Bình Định area, now part of Gia Lai.
