How to enjoy it
The broth is soured with one of me, chay, tai chua, or cà chua. The usual seafood is mực, tôm, cá song, ngao ta or ngao tây, hà, and ghẹ or cua. Greens are whatever the table wants. The usual bunch is rau muống, cải soong, cải xanh, fresh bulb onion, rau cần, súp lơ, and mushroom, plus plain tofu eaten very hot.
The pot ends with bánh đa or mì tôm.
