Where it comes from

Hanoi. Michelin’s 2025 notes put the bowl in the Old Quarter and name a shop that has cooked it for nearly 40 years.

How to enjoy it

Eel comes cold or stir-fried, with vermicelli in soup. The same kitchens also serve eel congee and eel spring rolls.

The 2024 city tour describes one bowl with greens, crushed peanuts, and fried shallots.

Crispy eel comes mixed with stir-fried glass noodles, egg, and bean sprouts. Miến trộn tosses the noodles with eel, cucumber, and herbs. Cháo lươn is eel porridge.

Where to try it

Miến Lươn Chân Cầm is in the Old Quarter, on the 2025 Bib Gourmand list. Miến Lươn Đông Thịnh is the eel shop from the 2024 tour, also a Bib Gourmand.
