Texture

Dân Việt on 5 September 2025 calls the sheets smooth, thin, and soft, not crumbly, with a sticky pull from good rice flour. Wood-ear chopped and tossed in oil is spread on the sheet so it does not stick. VnExpress on 18 March 2016 says a little bột dong keeps the sheet chewy and thin, and keeps it from going hard. Both stay.

Taste

The dip is fish sauce, lime or kumquat, a diagonal slice of chili, rau mùi, bạc hà, and black pepper, on the 5 September 2025 account. VnExpress says the sheets used to be dipped with nước mắm, and that a few slices of chả quế are added now.

How to enjoy it

Morning, off a banana leaf, at a small pavement set. Dân Việt says the sheets are often already steamed in a basket.
