Taste

The first sip is sharp and a little salty, then fragrant, and the heated cup leaves you warm.

How to enjoy it

Three mixes. Pound three raw ngán into a cup with chopsticks until the meat is red, then add clear liquor. Or boil two or three medium ngán, tied shut, and add the meat and the liquor inside the shell to quốc lủi, then break the dark liver so the cup goes pale pink or pale green. Or heat three to five in a small pot with quốc lủi or sake and drink it hot.

The first taste is sharp, from the ngán, and a little salty, from the liquor in the shell. The hot mix is the one that warms you.

Where to try it
