Ghe Ghẹ
Ghẹ is the swimmer crab visitors ask for at Hàng Dương, also served as ghẹ nấu bầu. Some shells are red-pink and some are green, and the meat is firmer in the last days of the lunar month.

How to enjoy it
At the market, point at a live crab and the stall cooks it, or take a pan already on the fire. In town, ghẹ nấu bầu is the named plate.
One crab at 450,000 VND a kilogram on 11 Mar 2019, and a cook-to-order fee of 10,000 VND a kilogram for steaming and 30,000 for the other cooks. Updated 28 Feb 2025, the cook-to-order cost is a few tens of thousands of đồng. Keep the 2019 fees and the 2025 line.
