Eat on Đầm Lập An, with the boats and the oyster stakes in the water. Oyster farming here dates from the late 1990s. The plates are oysters grilled over the fire until fragrant, a nourishing oyster porridge, oysters stir-fried with onion, and a cool oyster salad.
Nhân Dân says the lagoon farms rock oysters only. A cook there calls the rock oyster firm and strongly fragrant, and favors it for nướng mọi, for the grill with cheese, and for porridge, and says raw eating suits the milk oyster. VietnamPlus calls the famous Lang Co oyster the milk oyster, eaten raw with lemon or with soy sauce and wasabi, grilled with cheese, grilled with mỡ hành, or simmered into porridge, and says the Lang Co way with the raw shell is its own. In February 2016 one floating restaurant sold the oysters at about 60,000 VND a kilogram.
A spiny snail is steamed with lemongrass and eaten with ginger. Sò méo and green mussels are on the lagoon tables. Guests eat cá hồng and cá mú raised under the rafts. At Tân Cảnh Dương the evening is grilled seafood and a bonfire.
Bún bò Huế and cơm hến are Huế bowls. Cao lầu and cơm gà sit toward Hội An and Đà Nẵng. Báo Quốc Tế calls March to June the best-looking months on the lagoon.
