Chive noodle soup Bánh canh hẹ

Tuy Hòa’s own noodle soup: soft strands that do not break, sea-fish cake, and a thick cover of chives. The smell of the chives is the draw, and the cake comes up in the same spoon.

Texture

The strands are soft without turning mushy and hold together in the pot. Phú Yên tourism’s food roundup makes them from bột lọc or bột gạo, while its bánh canh article says bột gạo.

Taste

The fish cake is cá mối, cá cờ, or cá nhồng, pounded, shaped thick, steamed, then fried. Chives and cake go into every spoonful.

How to enjoy it

Eat it hot, chives and chả cá together. It is sold all day, and a hot bowl suits a cold morning.

Where to try it

Chợ Tuy Hòa, on the Trần Hưng Đạo side of the market, and the corner of Ngô Quyền and Trần Hưng Đạo.
