Texture
The city portal says the rice is cooked as whole grains, not pounded or milled, with a little sticky rice so the porridge stays silky, and that the bowl is thin beside the duck and goat porridges it names.
Taste
The city portal calls the cool-weather bowl fragrant and hot with chili. Người Lao Động calls the bone broth a sweetness without the fat of a meat stock.
How to enjoy it
Mix the eel through the porridge. The city portal adds pepper, chili, and chopped scallion and rau răm, and says bánh mì or bánh mướt on the side. It says the bowl shows itself in cool weather. The 24 November 2022 city page treats it as the bowl that means you have arrived, at any meal.
Vietnamnet, 27 November 2023, soaks small field eel in rice water, boils it briefly, pulls the meat, and stir-fries it with shallot, turmeric, and chili. The bones are crushed, the liquid is strained, and that liquid is cooked into the porridge. The bowl is finished with rau ngổ, fried shallot, rau răm, tía tô, scallion, and pepper, plus vinegar chili or fresh chili. Người Lao Động, 13 February 2024, also crushes the bones into the pot and says the sweetness is not the fat of chicken, duck, pork, or beef. The city portal does not put the eel in the pot that way. Keep both.
