Two eel pots stay. One stir-fries the eel and folds it into a thin porridge of whole grains and a little sticky rice. The other crushes the bones and cooks that liquid into the pot. Súp lươn is the second bowl, with bánh mì or bánh mướt: one account stir-fries the meat with turmeric, and another leaves long strips in an annatto broth that tastes of nén.

Morning is bánh mướt with giò lụa or chả, xôi, cháo canh, or a bánh mì chả nướng if you are walking. Lunch can be bún chả nướng with a thick peanut sauce. Summer brings canh hến and hến xúc bánh tráng. Rươi season brings chả rươi and mắm rươi. The markets sell nộm, nước chè xanh, and kẹo cu đơ, the peanut brittle a maker from Hương Sơn set on bánh tráng.

Đào Tấn is the citadel night street, from cửa Hữu to cửa Tả, with a second line of about 150 m, in Cửa Nam. Mobile kiosks run 18:00–06:00. Fixed kitchens were allowed 24 hours. Hồ Sỹ Dương is the other night stretch, for xôi, cháo gà, cháo lươn, and miến ngan.

Cửa Lò is the beach of this city. Ask for charcoal squid, and for mực một nắng when you want it dried one day. The beach also has mực nhảy and mực câu. Tương Nam Đàn, nhút Thanh Chương, and bánh đa Đô Lương are the neighbor sauce, the ferment, and the cracker. They are not stalls in the center.
