Eat the plateau, not Mai Chau’s rice valley. Ban Ang puts bamboo sticky rice, grilled stream fish, smoked meat, flash-fried calf, love sticky rice, leaf-yeast wine, bamboo-tube fish, and forest greens on one table.
Hmong cooking brings pounded rice cake and thắng cố. Thai and Muong cooking brings hearth-smoked buffalo, five-colour sticky rice, forest greens, and canh bon. Dao cooking brings soured meat with rượu hoẵng. The night market adds dried buffalo and hearth sausage.
