Walk a barrel house and look down the rows of wooden vats. The craft is over 200 years old. The first draw comes after about a year. The vats are 3 m across and hold 14–17 tons. The salt ratio is 3 tons of fish to 1 ton of salt, and also 2.5–3 fish to 1 salt. The catch season is April–November, when the anchovy schools come inshore. One workshop ages cá cơm than for 15 months to 43 percent nitrogen. Output is over 10 million litres a year from about 100 producers, and also about 6 million litres. The old pattern was family houses along the Dương Đông river so boats could land.

The sauce is a dark cockroach-wing colour, salty and deeply sweet. Nitrogen is trên 25ºC across the district, 43 percent at one workshop, and 20–43 gN/lít, with readings up to 40°N. Age is about a year, 12 months, or 15 months at that workshop. Fermenting and bottling happen inside the old huyện Phú Quốc, with fish from the Gulf of Thailand. National geographical indication came in 2001, and European protection on 8 October 2012. A house name is a workshop. The visit is the vats.
