PriceA shared plate plus herbs is a light meal.
Where it comes from
Southern and central Vietnam. Ho Chi Minh City is an easy place to eat a good one. In Da Nang the crepe runs smaller and crisper, and people wrap a piece in herbs before the dip.
How to eat it
Break a piece, wrap it in a leaf with herbs, and dip. Do not eat it with a fork as a pancake.
It should be crisp when it lands. A soggy crepe has waited too long.
